Slow Cooker Paella
If you enjoy Spanish cuisine, this paella recipe is a keeper! It requires no paella pan OR paella cooking skills – just a slow cooker and 20 minutes of prep time. The outcome, however, is delish every time!

Extra-virgin olive oil – 1 tsp.
Skinless, deboned chicken breasts – 1 ½ lb., cubed
Chorizo – ½ lb., sliced
Kosher salt – to taste
Fresh ground black pepper – to taste
Short-grain rice – 1 cup
Diced tomatoes – 15 oz. (1 can)
1 yellow onion, small chopped
Garlic – 4 cloves, minced
Paprika – 2 tsp.
Cayenne pepper – a pinch
Low-sodium chicken broth – 2 cups
Dry white wine – 1/3 cup
Medium shrimp – ½ lb., peeled, deveined
Frozen peas – 1 ½ cups
Fresh parsley – 3 tbsp., chopped
1 lemon, wedged, for serving
