Cheddar Chili Pancakes
This chili pancakes recipe not only proves that store-bought pancake mixes are an unappealing throwback to the past, but that savory pancakes are the new big thing as well! Delicious, with lots of air bubbles, these pancakes work well both for breakfast AND dinner!
All-purpose flour – ¾ cup
Cornmeal – ¾ cup
Granulated sugar – 1 tbsp.
Baking powder – 1 tsp.
Baking soda – ½ tsp.
A pinch of salt
Buttermilk – 1 cup
Unsalted butter – 3 tbsp., melted
2 thin bacon strips, fried till crispy and crumbled
Diced green chilies – 1 7-oz can, drained
2 spring onions, finely chopped
2 jalapeño peppers, seeds removed, minced
Cheddar cheese – 4 oz., freshly shredded
Grated Parmesan cheese, for serving (optional)
