Banana Walnut Bread
Easy to whisk together and moist, this banana bread version makes a great coffee cake or a healthy-ish breakfast option for the busy week! Not sure it will last the whole week, though - it's too tempting to skip an extra helping!

2 large eggs, room temperature
1 large ripe banana, mashed
Sour cream – ½ cup
All-purpose flour – 2 ¼ cups
Ground cinnamon – 1 tsp.
Baking soda – ¾ tsp.
Salt – ½ tsp.
Walnuts – ½ cup, chopped
Sprinkling options:
• More walnuts
• Coarse sugar
• Chocolate chips
