Baked Cod with Potatoes
Tired of complicated recipes? Cook a super healthy dinner using only simple ingredients! It takes a while to prepare cod this way but it's very yummy! Besides, note that you can use any white fish fillets - bass, hake, or haddock - small recipe modifications won't hurt the dish!

4 skinless cod fillets (5 ounces each)
Extra-virgin olive oil - 1/3 cup
3 small tomatoes, thinly sliced
3 shallots, peeled and cut into very thin rounds
Fresh thyme leaves - 2 1/4 tsps, chopped
4 fresh thyme sprigs
Lemon - 12 very thin slices
Coarse salt and freshly ground pepper - to taste
