Try a traditional stir-fry from Spain! You can enjoy the dish on its own – and believe me it’s a truly outstanding combination of vegetables and spices – or you can just as well add 2 or 3 beaten eggs to make the dish more satisfying and filling!

Garlic – 1 clove, minced
2 medium potatoes, peeled & cut into cubes
1 large onion, finely chopped
1 red bell pepper, seeded & cut into chunks
1 green bell pepper, seeded & cut into chunks
1 eggplant, cut into small cubes
1 zucchini, cut into small cubes
4 large tomatoes, coarsely chopped
Paprika – ½ tsp
Cumin – ½ tsp
Water – ¼ cup
Salt – to taste
Pepper – to taste
